Mole Tasting Menu

Available for dinner Monday - Saturday

It's all about mole! There are 7 classic moles of Oaxaca but there are actually hundreds of moles commonly served there. The meat or vegetable that is served with the mole is considered just a carrier. We hope you enjoy this menu showcasing pipián verde, mole amarillo, mole pasilla, mole de higos (fig mole) and mole negro. 


PRIMERO

Tetela 

blue masa triangular envelope stuffed with hoja santa, beans, cheese, pumpkin seeds, pipián verde

paired with Mezcal Casa Pineda Extravagante


SEGUNDO

Camarones en Mole Amarillo 

grilled shrimp, corn cremoso, mole amarillo  

paired with Flor de Oaxaca - Flor de Caña dark rum, mezcal reposado, banana liqueur, banana syrup, lime


TERCERO

Taco de Cabrito 

baby goat meat, refried beans, mole pasilla 

paired with 3oz '19 Casa Madero Gran Reserva Shiraz, Valle de Parras, México


CUARTO

Pechuga de Pato

Rohan duck breast, fig mole 

paired with 3oz '21 ZD Pinot Noir, Carneros, California


QUINTO

Mole Chocolate Cake 

chocolate cake, mole negro ganache, mole soil, chocolate gel, pepitas, ants, mandarin sorbet
